Instructions
Crush your favorite cookies into a bowl using a fork, ensuring no large chunks remain.
Whisk together oil, vanilla, and sugar, then sift in flour, cocoa powder, baking powder ,and salt until combined.
Divide the batter evenly between two microwave-safe mugs.
Microwave each mug for 60-90 seconds until the cakes are done.
Meanwhile, melt the chocolate using a double boiler or in the microwave, adding vegetable oil to make it runny and pourable.
Cover the cakes with chopped strawberries and pour the melted chocolate over the top.
Serve the cakes warm or after they've cooled down slightly, adding your favorite toppings and enjoy.
Notes
These cakes are best enjoyed fresh on the same day. For a smaller portion, simply halve the recipe to make a single serving.
